Belesh with hare from Oksana Abdrashitova. Thanks for the recipe with photos!
Dough:
1 pack softened margarine
1/2 cup warm water
2 tbsp.
spoons of mayonnaise 2 tbsp.
spoons of yogurt 1/2 teaspoon soda
1/2 teaspoon salt
flour
Filling:
potatoes
large onion
hare meat
mutton fat
salt, pepper, spices
Cooking:
Knead the dough, for this: mix kefir with soda.
Add mayonnaise, salt, kefir with soda, margarine to the Water and stir. Then add the sifted flour and knead a soft dough. Cover and let rest. At this time, prepare the filling.
Meat cut into small pieces. Peel potatoes and cut into cubes. Finely chop the onion, since hare is dietary and not fatty meat, I add a little finely chopped lamb fat. Mix everything, drain the excess liquid, salt, pepper and season with spices. I really like to add ground coriander, cumin and dill seeds. Divide the dough into two unequal parts.
Roll out the larger part into a circle larger than the pan and place in a greased pan. Put the filling on the dough, lift the edges of the dough on the filling and pinch as in the photo. Roll out the second part of the dough and put it on top of the filling, pinch the edges with the bottom dough. Put belesh in an oven heated to 175 degrees and cook for about 2 hours.
hare belesh , cut off the lid and pour over the broth or melted butter.
